Oatmeal raisin cookies and other miscellaneous adventures.
Last week was a testament to how God provides ever so graciously.
At first, I was worried because I had nothing on my schedule and JW had to start working overtime to prepare for his defense. Read: Boring week with no one to talk to and nothing to do except read. But praise be to God, my schedule filled up spontaneously - toy shopping with SoY, shopping with friends, shopping with JW, dinner out with JW and EF. I also made dumplings (gyoza or potstickers) for the first time ever with a few Chinese friends. At the end of last week, I was so happy tired. "Happy tired" can be likened to the state after exercising where you're sore all over but feeling good about it. It's not an official adjective (yet) but it's my favourite state of being. =P
This week is another one of those without JW (he will be present physically but absent mentally) as he preps for his defense next Wednesday. However, I now have a few more goals - compiling my own cookbook (which really means digitizing my recipes so that I can bring them home with me), MAYBE baking a pie (it's Pi Day tomorrow), helping a friend to pack and move and more reading. I've started applying for jobs, so I could always read up more to prepare for interviews, or write a few more emails to other HR departments. If it wasn't so cold and rainy out (I spoke too soon about spring, it seems), I'd love to bring Jasmine for longer walks at some park. But no, Durham weather refuses to cooperate - it even snowed yesterday. In March.
On another note, I baked these awesome oatmeal raisin cookies (recipe here) yesterday and I've been munching on them non-stop. Good thing they're thin, crispy and supposedly healthy...-ier? I mean, oats! So heart-healthy, but so bland in any other form! I love oatmeal raisin cookies. I'm not much of a cookie person, but I make an exception when it comes to oatmeal raisin. Somehow the oatmeal makes the cookie more cereal-y than regular cookies, and I like to munch on slightly chewy, crispy stuff. It also makes me feel good that I'm getting some oats in my diet. =P I don't LOVE cinnamon, though, so I tend to use only half the amount of cinnamon powder any recipe states. No pictures because they're gone already. Haha kidding. Weeeellllll, just half-kidding. There's only half the batch left, sealed up tight in a red CNY cookie container so that I can practise some self-restraint and make them last longer.
Yes I love raisins too, as you might have picked up on. I've met a number of people who don't, and I don't understand why. It's just a dried fruit, not...bittergourd or something extreme like that. I bet Jasmine would love raisins, and she's not even supposed to eat them as a dog. Then again, she pretty much loves everything apart from her own dry dog food. *shrugs*

Fight the urge fight the urge. I should definitely distract myself with a book now. =P

Welcome to the potsticker making club! They're quite therapeutic to make haha. I personally use and recommend PepperPlate (an app and website) to digitize recipes. It comes with other functions as well such as meal planners, grocery lists etc. But the function I like most is that you can auto port recipes from popular websites to your album, yet manually entering them isn't difficult either. Best feature is the "scaling recipe" feature. No more having to calculate what half a recipe's measurements are!
ReplyDeleteOOOOh interesting! Thanks for the recommendation, will probably check that out. My ultimate goal, though, is to have a clear folder with printed recipes because I don't like touching the computer with greasy or flour-ey hands. And it's so annoying when a screensaver comes on because your cooking time takes longer than 10 minutes or something. :P With a clear folder, I can always wipe off smudges or water stains, replace recipes, and add more pockets! Theoretically speaking it's a really good solution, but I don't know if it'll work out in real life because I haven't tried it yet. =P
